This recipe is almost evil because it’s so tempting, so easy, and I have the ingredients on hand all the time. I have to make it! You?
How to make Chocolate Pudding Cake:
1 cup all-purpose flour
1 cup sugar
1/4 cup unsweetened cocoa
2 teaspoons baking powder
1/4 teaspoon salt
1/2 cup milk
3 tablespoons vegetable oil
1 teaspoon vanilla
Combine flour, sugar, cocoa, baking powder, and salt. Add milk, oil, and vanilla; stir well. Spoon batter into an 8-inch square greased pan.
Mix an additional 1/3 cup sugar and 2 tablespoons cocoa. Sprinkle over batter in pan. Pour one cup boiling water over the contents of the pan. Don’t stir it!
Bake at 350-degrees for 25-30 minutes. As the cake bakes, it forms two layers, one layer of sweet, moist cake and another layer of rich pudding. As if that’s not awesome enough, stick a dollop of whipped cream on top. Or, you know, two.

Here we’d call that a ‘Chocolate Self-saucing Pudding’. It’s the sort of thing my mother learnt to cook from her mother, like scones and sponge cake. She would have eaten at boarding school too, on a special occasion.

I just made the chocolate pudding cake, it is so yummy! Thanks for sharing the recipe with us. I wonder what could happen if instead of boiling water, I would try boiling milk? What do you think? Thanks again for a winner cake! Oh, I forgot to mention that my son and I are frequently making the grandmother bread together, it really is awesome!

Who would have thought that I would find the ideal recipe from someone in the US, where they don’t even make “puddings” as we know them? Not me!!
