This red potato salad is my favorite chilled salad, perfect for summer, full of flavor and packed with my next favorite thing after bread–potatoes. Okay, chocolate is in there somewhere, too. And pie. And–
Oh, forget it. I love food…….
How to make New Red Potato Salad with Sour Cream & Dill:
2 pounds new red potatoes
3 boiled eggs
1/2 cup chopped onion
1/2 cup chopped celery
3/4 cup mayonnaise
1/2 cup sour cream
1 tablespoon white vinegar
1 teaspoon dijon (or regular) prepared mustard
2 teaspoon dried or 1 tablespoon fresh dill
1/2 teaspoon salt
1/4 teaspoon pepper
Cut up potatoes (leave skins) and boil. Cool and drain. Chop eggs, onion, and celery, and combine in a large bowl with potatoes. Add mayonnaise, sour cream, vinegar, mustard, dill, salt, and pepper. Mix thoroughly and chill.
That’s it. So easy. So good. I’m in love with this salad. I’m gonna marry it.
Sometimes I’m very dramatic. About food.

I have made potato salad lately…but I am so finicky. I like creamy potato salad. I don’t like chunky, and I would NEVER eat a peeling. I know, I heard it for years from mother “that is where all the minerals and vitamins are”..ick, so what. :fryingpan: My husband eats them, so when I am hurried, I steam them just like above and serve them to him…but if I eat a couple, I will remove that peel first. :mrgreen: His grandfather had a poato farm in NY…they even eat them RAW. ICK…HATE potato skins at a resteraunt too…YUCK…but I have to say, your salad is PRETTY. I make my creamy potato salad about the same way. My sister love the German potato salad, served warm or hot.

On another note, this year it looks like I’ll have an abundance of tomatoes, and a few beans, and not much else with all the rain. Do you have any recipes for tomato sauces or ketchups and salsas that I could can?
