Pepperoni Lasagna

Feb
4

Does that pepperoni look like a tongue sticking out? I’m so sorry! Okay, this is the world’s best lasagna and it only has 13,000 calories per serving! I’m just kidding. Now seriously, this is a low-calorie treat. Okay, so not really, but I promise it has less than 13,000 calories! (I don’t know how much less, don’t ask. We don’t care. This is LASAGNA, people!) You’ve probably heard people claim they have the world’s best lasagna before, but they lied. This is the world’s best lasagna. Go ahead, throw away all your other lasagna recipes. I’ll wait. Okay, now that you’re back, let’s get started!

How to make Pepperoni Lasagna:

1 pound ground beef
1 pound ground sausage
6 ounces sliced pepperoni
1 cup chopped onion
1 clove garlic, minced
1 teaspoon basil
1 teaspoon oregano
salt to taste
1 7 1/2-ounce can tomato paste
1 pint homecanned tomatoes or 15-ounce canned tomatoes
1 box lasagna pasta
24-ounce ricotta cheese
2 eggs
1/2 cup grated Parmesan
1 tablespoon parsley
8-ounce shredded mozzarella

In a large saucepan, cook ground beef and sausage. Drain. Add onion and garlic; cook for a few more minutes. Combine with basil, oregano, salt, tomato paste and tomatoes, then simmer meat mixture for 15 minutes. In a small bowl, combine ricotta cheese, eggs, 1/4 cup of the Parmesan, and parsley.

Note: I never pre-cook lasagna noodles. They sell those “special” lasagna noodles that they say don’t need to be boiled. Forget that. Just use regular lasagna noodles. It works. Trust me.

To put lasagna together, in a greased 9 x 12 pan, layer uncooked noodles, ricotta cheese mixture, and the meat/tomato mixture. On top of the meat/tomato mixture, layer sliced pepperoni. Place shredded mozarella on top. Repeat layers. At the end, sprinkle remaining 1/4 cup Parmesan on top along with a little more parsley.

Bake at 375-degrees for 30 minutes.

Take a moment to think about all the meals that came and went using this jar from the old cellar before you put it in the sink to wash.

Serve a salad topped with Garlic-Herb Croutons and a loaf of Hot, Crusty French Bread to go along with! Then wait for people to rave over your amazing lasagna……

No, not 13,000 calories per serving. But probably about 12,597.

Why is all the yummy food so bad for us?

I’ve never had it with pepperoni but it sounds really good. I usually only make lasagna for family gatherings and two of them are vegetarians so I haven’t made one with meat in a long time and I miss it. We have a family recipe that you add peas to the meat mixture – adds a sweet touch to it.

    Hi Suzanne

I’m not sure how I stumbled onto your website but I’m sure glad I did! I’m printing off the recipe for the lasagna and I’m definitely trying the croissants. I’ve always wanted to make those.

    Wish me luck!

    My Experience with uncooked noodles.
I met my husband online in a chat room. We had been friends for many years and during that time had met our fair share of losers. Anyway, finally, we decided to get together because we had so much in common and had truly fallen in love. Anyway, back to the story. The first time he came to my house, I decided to make him lasagna. My ex-stepsons’ wife recommended that I not cook the noodles when making the dish. I had always cooked the noodles.
He arrived and this dish looked delicious. I cut into it and it’s hard as a rock. The poor guy ate it like it was manna from heaven. I decided right then and there that this was the man for me. Anyone who could eat this had to be in love with me. My son couldn’t even eat this stuff.
Well, 7 years later and we’re still happily married. For the first 4 years though, I refused to make lasagna. I finally broke down and made it but I ALWAYS precook the noodles.
This remains one of our fond memories in the “remember when…” series.

You lost me on the Pepperoni. LOL Well, I don’t like lasagna anyway, but I am not real fond of Pepperoni either – unless it is VERY THIN and extremely crunchy on a pizza. Then I will eat it. But, for lasagna lovers and I know there were millions, it looks like a winner. Lord knows, around here, if you are sick, and belong to a church, the first thing the women bring you is LASAGNA. LOL

I thought you were going to have a weekly column in the Chas. Daily Mail but I’ve yet to see it in there. I really love your website and all that goes with it. I like your recipes also as its the way I generally cook. I was just wondering what had happened to the column.

Hi, Leslie! You can read my first Daily Mail column online at http://www.dailymail.com –scroll down to the sidebar on the left where under Food & Living it has Country Living. Click on Country Living. That’s where my columns will always appear on their website. My second column was to be this past Monday but it was bumped for more space for inaugural coverage and will appear next Monday instead. My columns will be running every other Monday. (Except next Monday and the following they will runs two Mondays in a row to make up for being bumped this past Monday.) Thanks for asking!

This sounds so interesting. Like most of your recipes! I will have to give it a try. It kind of makes me think of crockpot pizza as far as the ingredients go. Thanks for the great recipes!

The Slanted Little House

"It was a cold wintry day when I brought my children to live in rural West Virginia. The farmhouse was one hundred years old, there was already snow on the ground, and the heat was sparse-—as was the insulation. The floors weren’t even, either. My then-twelve-year-old son walked in the door and said, “You’ve brought us to this slanted little house to die." Keep reading our story....
