We are going to have grilled salmon, grilled vegetables (eggplant, summer squash, onions, green beans, Kennebeck potatoes, and a yellow pepper if I can find a good one) , a summer fruit salad, and Buttermilk pie!

We don't cook inside much in the summertime for supper.

Mmmmm! I am going to Kathryn's house for dinner. What a yummy menu!. Today is Friday and hubby and I are going uphill (mountain) to the “big” town to do errands. We will have a large, late lunch there, so dinner will be a light snack only.  Been craving a large bowl of succotash though… fresh cooked limas, fresh corn, and chopped, fresh off the vine, tomatoes, with a large pat of butter!

I made brunch today, as my husband went into work earlier than usual. I grilled wild Alaskan King Salmon for him - he likes Salmon! I had half  of a toasted bagel with cream cheese, and toasted almond slivers on top. YUM OH, and then I made him broccoli and buttered noodles, grilled onion.

Salad! We eat salad in the evenings…of course it includes just about

anything you can imagine: lettuce or spinach ,grape tomatoes, cauliflower, green pepper,

vidialia onions, grapes, boiled egg, grated extra sharp cheddar cheese, almonds,

and croutons.  Fills a whole dinner plate…would love to have some salmon…just on

the side.

New to the forum…. I'm a Suzanne too, so wnet by my puppy's name, Nolli. Not certain when dinner will be around here, hubby left on a night call at 4am and I have no idea when he will be back… he's somewhere down in Philly and then on to N.J. So, I guess I will make a pasta salad of some sort and grill some pork chops with homemade barbeque sauce. Add some fresh sliced tomatoes and mozzerella and we will call that dinner. Dessert is always ice cream… with either brownies or cookies… but I may decide to do a pie.

For lunch I had… VEGGIES!

I fixed roasted butternut squash with goat cheese and sage butter, and roasted beets with olive oil and salt.

I wish I could say mine was fresh from the goat, but alas, not yet. I found a brand at Kroger's that I adore. But, soon, Suze.. you shall has the goat cheese!

I buy commercial goat cheese too…I don't have goats. LOL

Wow, some of you are soooo creative! I get so bored and sick of my cooking. I am finicky and my husband is finicky - we love alot of things, but sometimes not the same things and i dont' want to cook two meals. Sometimes I will do like this am..make his and I'll have a little something different. But, there is just the two of us and I tend to do the same thing over and over. Blahhhh

I love succotash! You know what? I sometimes have it for breakfast. Summer food is so good, isn't it?

It's deliciously simple!

Basically you just take the butter you're going to be using on your squash (or sweet potatoes! It's excellent on sweet potatoes… mmm!) and put it in a small sauce pan, then add your fresh sage (chopped up to your liking).

Heat them together for a few minutes so the sage's oils and flavors can infuse with the butter as it melts. Then after it's all melted maybe give it a minute or three just simmering together, but stirring and watching closerly so the butter doesn't burn. Then just spoon it over your dish, and that's it!

I rarely measure things like this, becaue it's completely to your taste. You like more butter, less sage, or vice versa, but I think I used about a 1/2 stick of butter and a couple of tablespoons of fresh sage.
