yooo hoooo HEATHERRRRRR…I did it!!! I used your measurements for my banana peppers and the upside down trick and it really really really worked!!! didn't think it would but it surely did!!!! they are great!!!! wow….I MADE PICKLED BANANA PEPPER RINGS!!! WOOOOO HOOOOO……..

Yay, Tresh! I know…I couldn't believe it worked this way but it did. And no mushy peppers this year!
WV_Hills, I did not think you came on strong about canning safety at all. It is not a topic to be taken lightly.
Hawkswench, the zucchini relish sounds great. I saved it for next summer when I have zucchini coming out of my ears again!

Oh, I forgot to tell you I am canning scuppernong jam this weekend. I also hope to make some of that yummy sounding caramel apple jam if I can get enough apples off of my tree. I have been salivating over that recipe since I read it!

Shumom - I made your caramel apple jam. it smells and tastes wonderful. Question? It is a bit thin and not thick. I looked up your recipe. The one I found online said to use 3 cups sugar and 2 cups packed brown sugar. i did not pack my brown sugar bec you did not say to. Was I just suppose to know to do that? Just want others to know it too. thanks.

I love scuppernongs, I bet the jelly is delicious too! I'm going to make some caramel apple jam as soon as I get a free day. That should be about November 3rd…..

A grape. Kinda tastes like a concord grape, but it's bigger and some are green & some are purple. I think you need some!

Anyone out there know about Mayhaw jelly? My grandmother in Marshall, Texas, (East Texas) always had it onher window seal. She kept her jellies unopened on the shelf of her kitchen window. It looked like stained glass. It is a berry in East Texas I think. Anyone ever see it it make it. It is a plum color.

Hey yall…I'm brand spankin new here. The burnt sugar cake recipe drew me in and I figured anyone who would take the time to post black iron skillet photos alongside her directions, well, I had to find out who this woman was!
So I'm thrilled to be here.
Scuppernongs. I used to make the purple cousin of scuppernongs…muscadine jam. Would cook the pulp, cook and chop the skins and mix them back together. Loved it!
If I can find some big ol' rock hard country pears, I'll make some pear preserves. All sticky and sweet and carmelized! Mmm mmm!

I cant remember where the caramel apple jam recipe is on the forum but try it, find it, it is unreal. i put it in the refirgerator and it firmed up nicely. I am going to have to make another batch so I will have some to sell.

Okay, Miss Dana. I need your help! I think I have some of these country pears. I keep finding all sorts of treasures on our land (we just purchased in May). Along with my scuppernong grape vine and 2 apple trees, we also found a pear tree. The pears are big and hard and misshapen and green. I was told to wrap them in paper lunch sacks and store them in a cool dark place and they would ripen, but they just started to rot and not ripen.
Do you think I can salvage the rest of the crop and make preserves with them? Any tricks I need to know to be successful with this kind of really hard pear in a preserve?
