We need to post some YUMMY recipes - it could give us an idea for a dinner, or dessert or someone may need a recipe for something. Post them here!

                                        Banana Pudding

2 small pkg.'s instant vanilla pudding

3 cups milk

1 8oz. carton Sour Cream

16 oz. Cool Whip

2 Boxes vanilla wafers

6 bananas

Mix pudding with milk. After slightly thickened, add sour cream and cool whip. Mix thoroughly. Layer pudding, wafers and bananas in several layers. Chill. Enjoy!

BT Dip

1 jar (8oz) of bacon pieces or about 7 slices of bacon cooked crispy and broken up

1 cup of Miracle Whip or Mayo (your taste preference)

1/2 cup of sour cream

2 cups of chopped tomatoes ( try to remove as much of the seeds and the gel mass that you can)

Stir together first three ingredients, fold in tomatoes, refrigerate over night. Serve on crackers or use as a base for macaroni salad

Hubby is going to a fantasy football draft party Saturday and will be taking this dip with him!  Thanks for the recipe!

Hot Artichoke Dip (Enough for an 8×8 cake pan:)

1 Cup Marinated Artichokes (the 14 oz jar)
1 Cup Mayonaise
1 Cup Parmesan Cheese (Kraft is fine)
1 8oz Package Cream Cheese (softened)
1 7oz Can Chopped Green Chilies
Jalepenos as desired
Minced raw garlic, if desired

Drain the artichokes and discard the marinade (or save it for a salad dressing). Chop the artichokes into small pieces. Some of the outside leaves may be tough - but if you can cut them small enough and you can still use them. They will soften in the dip.

Mix the mayonaise and cream cheese until smooth. Add the parmesan cheese, the chopped artichokes and the green chilies and stir until well blended. Add jalepenos — taste after you mix in each spoonful. You can also add more green chilies instead of the jalepenos. I use a teaspoon or more of minced garlic to add to the heat and flavor.

Put the mixture in a casserole dish or an 8×8 cake pan, and bake at 375 degrees until it’s hot through, and starting to brown on the top. Serve warm with tortilla chips, or crackers. (Try it with the Nabisco crackers with the sun-dried tomatos!)

Enjoy! Be prepared to make more - it goes fast.

I saw some good things on “ten foods or combinations you love”…hope some of you post some recipes for your fav, like the baked chicken and rice, or the peanut butter swirl brownies…YUM I always need ideas, because I get sooo sick of my cooking!!!

one of the most simply dips for fruit - we do strawberries or blueberries in it!

one 8 oz pkg cream cheese (room temperature)

one jar marshmallow creme-kraft 7 0z

beat cream cheese till smooth and add the marshmallow creme..

i usually add a capful of vanilla and a few grains of salt…

better refrigerated…

A simple trick that I use is I take flavored coffee creamers and use them to replace some of the milk in such things as Dream Whip (think of the flavored Cool Whips), biscuits, pancakes.

Also for an adult type cake I will replace 1/3 cup of water with either Kaluha, Rum, Peach Schnappes in cake mixes such as Duncan Hines and then bake as usual.

I had the best cake at a dinner the other evening…it is called Southern Praline Pecan Cake.  Simple and easy, here is the recipe.

Southern Praline Pecan Cake

1 box butter pecan cake mix*     
1 container coconut pecan frosting
4 eggs, beaten
2/3 to 3/4 cup oil, depending on how moist you want it, I used 2/3 this time. (I tried using butter instead, and the flavor is good, but the batter takes longer to cook.)
1 cup water (I've tried milk instead, but it took longer to cook. Maybe it was the butter.)
1 cup chopped pecans, divided
* I added 1/4 tsp baking powder this time, to help it rise.

Combine all ingredients except pecans in a large bowl; mix until combined. Stir in half the pecans. Sprinkle remaining pecans in a lightly greased 10 inch Bundt pan; pour batter over pecans. Bake at 350 degrees for 50 minutes, or until toothpick inserted near the center comes out clean. Serves 8-10.
(I have also made these as cupcakes, and they are just as good. Sprinkle pecans on top of batter and bake for 30-45 minutes. Yummy for breakfast!)

This was very good…


Peanut-Butter Cake

1/4 cup butter, softened
1/4 cup peanut butter
1 1/2 cups firmly packed brown sugar
2 large eggs
1/2 cup warm water
1 cup thick sour milk or buttermilk
2 cups all-purpose flour
1 teaspoon salt
1 teaspoon baking soda

Preheat oven to 350.  (If you are using dark pans, or glass pans, reduce oven temperature by 25 degrees.)  Grease and flour 2 (9-inch) round cake pans or 1 (13-x-9-x-2-inch) cake pan; set aside.  (If I'm turning my cakes out, I also line them with wax paper.)

In a large bowl, mix butter and peanut butter with sugar, add eggs.  Mix dry ingredients together.  Alternate dry and liquid ingredients, ending with dry.  Beat on low speed with electric mixer for 1 minute, scraping bowl frequently.  Increase speed to medium-high and continue beating for 2 minutes.  Pour batter into prepared pans.

Bake for 25 to 30 minutes. Let layers cool in pans for 10 minutes.  Remove from pan and cool completely on a baking rack.

Frost cake with Chocolate-Peanut-Butter Frosting.

Chocolate-Peanut-Butter Frosting
makes about 2 1/2 cups

1 (1-ounce) square unsweetened chocolate, melted
2 tablespoons butter, softened
2 tablespoons peanut butter
2 cups confectioners sugar
1/2 teaspoon vanilla extract
3 or 4 tablespoons milk

In large bowl, combine all ingredients and beat on medium speed with an electric mixer until thick and creamy.

Chicken 'n' Orange
 
2 to 3 boneless chicken breasts
1/2 cup flour
salt & pepper to taste
olive oil for frying
2 to 3 tbsp. butter
juice & a little pulp from 1 orange
2 heaping tbsp brown sugar
a few sprigs fresh sage
 
Cut chicken in chunks.  Combine flour, salt and pepper.  Dredge chicken in flour mixture.  Add olive oil (enough to fry chicken without burning) to a large skillet and heat.  Fry chicken till done.  Remove from pan and set aside.
Wipe out pan.  Add butter.  Melt in pan.  Add the orange juice, a little of the orange pulp, the brown sugar and the fresh sage to the pan.  Mix well.  Stir in the chicken and simmer (about 5 minutes), just until the chicken is well coated and heated through.  Remove sage.  Serve as is or over rice.
 
Note:  If fresh sage is unavailable, a couple of shakes of dry sage can be used.

Beeyourself, I copied that Peanut Butter cake recipe! My husband LIVES off peanut butter and loves Peanut butter cookies and those Reese's cup cookies, so I know he'll enjoy this…when I am in the mood to tackle a cake again. LOL

I got this recipe from a friend and absolutely love it!


Strawberry Mango Salad


3/4 cup Vegetable Oil

1/2 cup Sugar

1/3 cup Balsamic Vinegar

1 tsp Salt

8 cups Strawberries, quartered

1 large Mango, cubed

1 cup Sweetened-dried Cranberries

1 medium Onion, thinly sliced (although I love onions, I've never included them in this salad)

1 cup Slivered Almonds


Whisk together the first  four ingredients in a smal bowl.  Set aside.

In a large bowl, combine your greens of choice (I prefer a Spring Mix blend or Romaine Lettuce) with the next four ingredients and lightly toss.  Drizzle desired amount of dressing and toss gently to coat.  Sprinkle with almonds and enjoy!
