Several of you asked for the burrito pie recipe I use, so here it is.  I got it off allrecipes.com, and then made my own adjustments.  Actually have to thank my coworker, Linda, she brought her leftovers in one day and it looked sooooo good I had to try it.  So that's where she got the recipe.

One day I didn't have black olives, so I substituted Black Beans.  I never used black olives again, the black beans just add to the Mexican flavor.  I also don't use taco sauce, I use salsa. 

Anyway, there ya have it.  btw, it makes alot so use your big pan!

Burrito Pie

  • 2 pounds ground beef
  • 1 onion, chopped
  • 2 teaspoons minced garlic
  • 1 (2 ounce) can black olives, sliced (I substitute black beans)
  • 1 (4 ounce) can diced green chili peppers
  • 1 (10 ounce) can diced tomatoes with green chile peppers
  • 1 (16 ounce) jar taco sauce  (I use the WM brand of thick & chunky salsa)
  • 2 (16 ounce) cans refried beans
  • 12 (8 inch) flour tortillas
  • 9 ounces shredded Colby cheese  (I use a Mexican Blend)

DIRECTIONS

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. In a large skillet over medium heat, saute the ground beef for 5 minutes. Add the onion and garlic, and saute for 5 more minutes. Drain any excess fat, if desired. Mix in the olives, green chile peppers, tomatoes with green chile peppers, taco sauce and refried beans. Stir mixture thoroughly, reduce heat to low, and let simmer for 15 to 20 minutes.
  3. Spread a thin layer of the meat mixture in the bottom of a 4 quart casserole dish. Cover with a layer of tortillas followed by more meat mixture, then a layer of cheese. Repeat tortilla, meat, cheese pattern until all the tortillas are used, topping off with a layer of meat mixture and cheese.
  4. Bake for 20 to 30 minutes in the preheated oven, or until cheese is slightly brown and bubbly.

I also use the big burrito wrappers instead of tortillas, it just saves time and you don't even use a whole package. 

I hope you all like it as much as we do!

We really enjoyed your Burrito Pie tonight!  I made it with the black olives.  I just love 'em.  (I have one on every finger at Thanksgiving — olive fights are the best!)  I served it over lettuce with tomatoes and sour cream and jalapenos on the side.  Now I know that it makes a LOT — although there isn't much left — but I could easily serve it to company.  I used fresh flour tortillas — and they just melted in the mouth!


It's a hit here!

Made the burrito pie yesterday. It was delicious. More is better (!) so I used the black olives and the black beans. Super yummy! MacGyver LOVED it! Thankyou Jayne!

Goodness Gracious this sounds great!  I mean…mucho bueno!!!

Yall, I am telling you the truth…if you have not made Suzanne's pepperoni lasagna you are missing out…it is soooo easy to put together and it is lovin' in the oven!!!  I mean…mamma mia itsa amore!!!
