This red potato salad is my favorite chilled salad, perfect for summer, full of flavor and packed with my next favorite thing after bread-potatoes. Okay, chocolate is in there somewhere, too. And pie. And-
Oh, forget it. I love food…….
How to make New Red Potato Salad with Sour Cream & Dill:
2 pounds new red potatoes
3 boiled eggs
1/2 cup chopped onion
1/2 cup chopped celery
3/4 cup mayonnaise
1/2 cup sour cream
1 tablespoon white vinegar
1 teaspoon dijon (or regular) prepared mustard
2 teaspoon dried or 1 tablespoon fresh dill
1/2 teaspoon salt
1/4 teaspoon pepper
Cut up potatoes (leave skins) and boil. Cool and drain. Chop eggs, onion, and celery, and combine in a large bowl with potatoes. Add mayonnaise, sour cream, vinegar, mustard, dill, salt, and pepper. Mix thoroughly and chill.
That’s it. So easy. So good. I’m in love with this salad. I’m gonna marry it.
Sometimes I’m very dramatic. About food.
I love food.
Have I mentioned that?

What a beautiful potato salad! It’s a balance of many good things. This may be on our weekend’s menu. Along with another stab at whole grain Grandmother Bread.

If I was not already a devotee of my husband’s potato salad, I’d give this one a try…it looks delish. And with those in my family with milk allergies it just means MORE FOR ME!

Is that not the CUTEST pic of Coco!! OOOH, I want to hug that big ball of fluff!
I have made potato salad lately…but I am so finicky. I like creamy potato salad. I don’t like chunky, and I would NEVER eat a peeling. I know, I heard it for years from mother “that is where all the minerals and vitamins are”..ick, so what.
My husband eats them, so when I am hurried, I steam them just like above and serve them to him…but if I eat a couple, I will remove that peel first.
His grandfather had a poato farm in NY…they even eat them RAW. ICK…HATE potato skins at a resteraunt too…YUCK…but I have to say, your salad is PRETTY. I make my creamy potato salad about the same way. My sister love the German potato salad, served warm or hot.

I think German potato salad has purple onion, bacon..but I know it is served warm. I just like CREAMY!!!

Would you invite me for a meal? I’m not picky…I love your breakfast, lunch, and dinner recipes. Or just have me over for dessert. I like butter on my butter, and there isn’t a kind of chocolate I don’t like. My perfect food includes both, with sugar to boot. English toffee (butter) covered in chocolate, and crumbled into rich vanilla ice cream with a swirl of chocolate fudge makes me swoon. Oh no! I just did the dishes from breakfast, and I’m already craving ice cream. See what you do to me?
On another note, this year it looks like I’ll have an abundance of tomatoes, and a few beans, and not much else with all the rain. Do you have any recipes for tomato sauces or ketchups and salsas that I could can?

I’d be as big as a house if I made half of your wonderful recipes. You probably wear off all those calories working on your farm and I, alas, sit at this computer too long lol.

Do you have any suggestions for a substitution for the celery? I’m not a fan of it, but every potato salad (or chicken salad) recipe seems to call for it! Should I just leave it out, or is there something that I’m not thinking of that can provide that subtle crunch?

Hi, Andi! How about sweet green peppers? (Or even red or yellow.) Do you like those? I think that would be good in this salad.

Suzanne, I don’t think the potato salad marriage would work out. After you’ve eaten the groom … it’s over. Better to stick with 52. xxoo

I just made this to go with tonight’s steaks. I substituted green peppers for the celery and added a dash of Worchestire(sp?) to the dressing. It was BIG hit! Definitely making this again. Thanks Suzanne!!
