Main Dishes, The Farmhouse Table

Does that pepperoni look like a tongue sticking out? I’m so sorry! Okay, this is the world’s best lasagna and it only has 13,000 calories per serving! I’m just kidding. Now seriously, this is a low-calorie treat. Okay, so not really, but I promise it has less than 13,000 calories! (I don’t know how much less, don’t ask. We don’t care. This is LASAGNA, people!) You’ve probably heard people claim they have the world’s best lasagna before, but they lied. This is the world’s best lasagna. Go ahead, throw away all your other lasagna recipes. I’ll wait. Okay, now that you’re back, let’s get started!

How to make Pepperoni Lasagna:

1 pound ground beef
1 pound ground sausage
6 ounces sliced pepperoni
1 cup chopped onion
1 clove garlic, minced
1 teaspoon basil
1 teaspoon oregano
salt to taste
1 7 1/2-ounce can tomato paste
1 pint homecanned tomatoes or 15-ounce canned tomatoes
1 box lasagna pasta
24-ounce ricotta cheese
2 eggs
1/2 cup grated Parmesan
1 tablespoon parsley
8-ounce shredded mozzarella

In a large saucepan, cook ground beef and sausage. Drain. Add onion and garlic; cook for a few more minutes. Combine with basil, oregano, salt, tomato paste and tomatoes, then simmer meat mixture for 15 minutes. In a small bowl, combine ricotta cheese, eggs, 1/4 cup of the Parmesan, and parsley.

Note: I never pre-cook lasagna noodles. They sell those “special” lasagna noodles that they say don’t need to be boiled. Forget that. Just use regular lasagna noodles. It works. Trust me.

To put lasagna together, in a greased 9 x 12 pan, layer uncooked noodles, ricotta cheese mixture, and the meat/tomato mixture. On top of the meat/tomato mixture, layer sliced pepperoni. Place shredded mozarella on top. Repeat layers. At the end, sprinkle remaining 1/4 cup Parmesan on top along with a little more parsley.

Bake at 375-degrees for 30 minutes.

Take a moment to think about all the meals that came and went using this jar from the old cellar before you put it in the sink to wash.

Serve a salad topped with Garlic-Herb Croutons and a loaf of Hot, Crusty French Bread to go along with! Then wait for people to rave over your amazing lasagna……
