Every year at this time, I help my cousin’s mother bake 90 mini-loaves of pumpkin bread for the church shut-ins gift baskets. You’d think I’d get tired of it, but it just makes me want to bake some more-for me! Whether you’re fixing holiday gift baskets to share, or just a sweet, warm treat to enjoy at home, pumpkin bread, especially with fresh pumpkin puree, is irresistible. How to make pumpkin bread:
2-2/3 cups sugar
2/3 cup shortening
3-1/3 cups flour
2 tablespoons baking soda
1/2 teaspoons ground cloves
2/3 cup nuts
4 eggs, beaten
2 cups canned pumpkin or fresh pumpkin puree
1/2 teaspoon salt
1 teaspoon cinnamon
2/3 cup water
2/3 cup raisins
Cream shortening and sugar. Add eggs, pumpkin, and water. Mix thoroughly. Stir in flour and the rest of the dry ingredients then add the nuts and raisins. Spoon into greased loaf pans. Bake at 350-degrees, one hour for standard-size loaves or thirty minutes for mini-loaves. Makes two standard-size loaves or fifteen mini-loaves.
*Tip: For holiday pumpkin bread, press candied cherries and candied pineapple pieces into the tops of the loaves before baking.

Tell us where to get little loaf pans ? You don’t have 15, do you ?? And do the little ones bake for the same time as the big ones ??

I am back from my trip and Must say I love the new look. I suscribed to the RSS feed but am still not sure how it works.
Maybe I get a tec person ( my son-in-law) to talk me through the process. Any way, just wanted to say, it’s great. Hugs to all.

I forgot how to spell while I was gone.
It should Say ” I’ll get a tech” It didn’t so my face is red.

I don’t have 15 mini-loaf pans, but my cousin’s mother does! I’m sure she got them at Wal-Mart.
