My son is making dinner tonite.  Granted he's only heating up frozen Garlic shrimp and pasta, but he's cooking it.  I'm “all done in” as my grandma used to say.  I moved student records and cleaned the records vault at school. I'm exhausted but it feels good to have it done.

I made fried chicken today..and Ghiradelli brownies (boxed). My husband was lucky he got that much, because we have a bug - allergy/sinus bug…and it is ICK. But, we had peas and candied yams with that - canned and doctored up.

We'll have leftover Burrito Pie.  I had made it for the coaches for lunch and Rick brought home enough for he and I for dinner.  I'm going to make a salad to go with it,  just because I'm craving one.

I'm simmering apple butter this evening and I made some Grandmother Bread this morning.  We're having ham and swiss toasted sandwiches (with horseradish! yum!) for dinner since the stovetop is all taken up with apple butter.  My house smells so good!  I should make apple butter every day, LOL.

I love the chicken with beer up the rear!  We call it beer butt chicken.  I have also substituted bottled italian dressing for the beer and basted the outside of the chicken with the dressing too.  Yummy!

Beer butt chicken aka Drunken chicken..yum…Sounds good with Italian dressing. We are having chili and cornbread tonight for dinner…but I keep smelling Apple butter and baked bread lol. I have never made it from fresh apples..I always cheated and used the jar applesauce and the crockpot method, it sure does make the house smell great!

All this talk about apple butter mmmmm.  When I was a kid we used to make it outside in a big copper kettle.  I tried to get my Dad to do it again this year but we couldn't get enough people together to do it.  As for dinner I am fixing vegetable beef stew with cornbread.

We had pizza delivery.  Some one who shall remain nameless but had better grow a brain soon so he can get that college degree, forgot he was told to make taco meat. 

DH & I got home to no yummmy smells from the kitchen so we ordered pizza. 

What's a girl to do?

Tresh,  I could almost believe that was his motive.  But we always order Papa John's pizza.  Having been a Papa John's pizza maker, it's the last pizza he ever wants. LOL!

Crockpot Apple Butter

  3 quarts unsweetened applesauce
  4 cups white sugar 
  2 cups  brown sugar
  1/3 cup apple cider,apple juice or water
  3/4 tsp nutmeg 
  1/4tsp allspice
  3/4 tsp ground cloves 
  1 Tb cinnamon 
Add applesauce, sugars, and cider together in crockpot.
  1. Cover and cook on low for 3 hours.
  2. Add spices and cook on low, covered, for 3 more hours.
  3. Uncover and continue cooking on low for 1-4 hours or until sufficiently thickened. May take longer, depends on how thick you like it and your crockpot.
  4. Ladle hot apple butter into 1/2 pint or pint size canning jars and process in a boiling water bath for 10 minutes.
  5. Makes about 6 pints.
  6. If you're not into canning, this would probably freeze very well.

We're having barbeque (oven-baked) boneless pork ribs and fresh corn on the cob!  They say they will stop having corn at the end of the month at the farmers market so I am pigging on corn now!!!

YUM, I LOVE sweet corn on the cob!

We had hamburgers…I didn't have much of an appetite today…as I've been sick (Hayfever)..but am better..so I only had half of one.
