We are trying the new chinese buffet that opened here last week. Have been hearing rave reviews. Will be glad for anything other than hamburgers and mexican food!

Ohhhh, how I LOVE Chinese…good Chinese anyway…not the stupid “food troughs” that some of the places are here, where you know they opened a bag and heated it and put it under the hot lights - everyone of them taste the same…but good Chinese…YUM.

The BEST Chinese I had was in Landstuhl, Germany…the man was Asian - the Chef, that is and his wife was German. WONDERFUL. There is an OLD resteraunt, downtown Shreveport, here, that has the same tasting eggrolls - unreal. But, the Chef had a heart attack, so not sure how long it'll stay open….

I am rambling. LOL

For some unknown reason little Spencer, WV has a Chinese buffet. It doesn't have a Mexican restaurant, but it does have a few diners/sandwich shops, a Wendy's and a MacDonalds. How a Chinese family happened to open a restaurant here is a mystery to me. I'm from Calif. originally, and we have a huge number of chinese restaurants. This one is as good as I've seen from a buffet type restaurant.


Could you send me a Mexican restaurant? Or maybe we should just open our own. I can make tortillas from scratch…

Boy, I wish I could!!! In our little town of 5000 we have 5 mexican rest! Its like, they drive down the street and see an empty building and say hmmmm, I think I’ll open a mexican rest, I can make tortillas! Then its horrible! They last 6 months and close, and the next person sees it empty and says hmmm, I think I’ll open a mexican rest there, I can cook beans….etc,etc,etc. There is one that is really good and authentic with a truly homemade food. But when thats your only choice, it gets old fast.

Stuffed bell peppers (my dear friend at work brought me 2 dozen beautiful green peppers from his farm yesterday!) and creamed corn made with sweet corn we processed and froze this summer.  That will be plenty for me but I have some leftover mashed potatoes for hubby and the kids.  Popsicles for dessert!

Last night we had roasted new potatoes with garlic and olive oil, mixed with carmelized onions, carmelized apples and sliced sausages.   It was all mixed and toasty brown and yummy!

Had lunch out, at “McCallister's”. Just a deli sandwhich place that is overrated to me…had club sandwhiches…mashed potatoes and gravey…I had a bite of potatoes…only ate half my club, to give my husband the other half…sweet tea (yum).

Y'all have been eating so deliciously!  Especially Kathryn!

My poor family.  It's fair week so they are on their own.  I'm hoping to get away for a few hours tomorrow to hang at the house and cook for them.  I've been eating fair food.  Last night was a huge philly cheesesteak sandwich.  Not good for the waistline I know, but it was scrumptious!
