Resurrecting "What's for dinner?" because I miss it!  What, have we not had dinner lately? Devil with Tail

I got out some cubed steak for tonight and I'm not sure what I'm doing with it.  (If anyone has a great recipe for cubed steak, please post it in Just Recipes today for me!)  I didn't have time to really cook last night and we just had fried eggs and potatoes for dinner.  I love breakfast for dinner every once in a while!

Clover made me do it.

Enchiladas are in the oven!  The aroma is driving my taste buds wild right now.  These will more or less just be a snack because there are no sides going with.  On the other hand, enchiladas are just about perfect food all by themselves.  Lots of cheese, onions and grain.  Yum!     Hungry

I think we'll grill some chicken outside today.  It's cloudy, but it's supposed to be in the 50's (heatwave!)

I'll probably put some potatoes out there, too.  We'll round that off with a green salad.  There may be some cornmeal-thyme cookies left for dessert.  The cookie monster must hide in my pantry!

Cornmeal-thyme cookies??  Do we have a recipe for that????  Hint, hint!   Sun  Got cornmeal, got thyme (lemon thyme at that!) growing in the micro climate in a corner of the garden.  Sounds like a very good use for some of it!  (Hint, hint.)

Posted my version of a Martha Stewart recipe  for cornmeal thyme cookies in Just Recipes. Has the lemon thyme in them.

Well, no grilling tonight after all!  Hubby has been outside all afternoon grading the driveway and I don't think he'll want to be grilling.  So,  chicken will go in No Peek Chicken!  A nice rice/chicken casserole.

I ended up searing cubed steak in a skillet in a little olive oil then adding onions and some of the homemade cream of beef soup mix w/water to the skillet, turned the steaks, and finished cooking on low.  YUMMY.  We had cornbread to go with it.

I had it easy today. Kiwanis cooked a meal to pay for the all night after prom party. They had fried chicken, corned beef and cabbage, mashed potatoes and gravy, green beans, creamed cabbage ( very good). rolls, dessert and drink. All this for $7.00. And I got to have homemade gooseberry pie. I thought I had died and gone to the big Prom in the skyHappy ButterflyHappy ButterflyHappy Butterfly
