The cast iron outdoor propane burner I have isn't this model, but this is basically what mine looks like.  Mine has longer legs (and cost about $70!) so it isn't this one, but the same principle.

Really! Maybe because I live in Texas but our has been out for months. I already canned jelly(from juice) and salsa(from #10 cans of diced tomatoes from Sams) I know I am such a cheater so I have already bought and used pectin, added jars to my stash and I bought another water bath canner as well as plastic freezer bowls for spaghetti meat sauce(I made 10 quarts!).

I saw the canner/cooker just today!

Yeah, they seem to stock things differently around the country.  I made that trip out there because several posters here reported that their WalMarts had canning equipment in stock.  Figured it was safe, since at least one of them was north of us!  Laugh

Oh, well.  We have what we need, except for a new jar lifter.  Every time I go by a Big Lots, I pick up a case or two of new jars.  The local hardware store has a pretty wonderful selection of canning stuff, but I was hoping the plastic jar lids to use after a jar is opened might be cheaper at WalMart.  We have some of those lids, but I'd like a few more, and some for wide-mouthed jars as well as the regular ones.

Plenty of canning to do in the months ahead!  Shimmy

If I get new jars, I always try Big Lots, so much cheaper.  And at the end of the season, I hit Wmart and get as many lids and rings as they have.  I just hate paying full price!

That's looks like a stripped down version of what I saw at Costco in Canada.  The one I saw had a wind guard, three burners and the stand looked quite a bit more substantial… but then the price was quite a bit more too.

The new pressure canner I ordered came late yesterday afternoon.  I decided on the All American 921.  Hubby spent this morning reading through the manual… he's really impressed with all things we'll able to can now. 

Tomorrow I'm going to get some chicken stock going, let it cook down and then cool it overnight in the fridge so we can skim the fat off and then on Sunday we'll can it. 

And I'm hoping for a sale on mushrooms soon so that I can give the mushroom soup recipe that Dede posted a try.

Guess I'd better start stocking up on more cases of jars and hubby better get those sets of shelves built so I've got somewhere to put the jars once they're filled.  Whip

The salsa recipe I use is so darn good with store bought canned tomatoes that I always make it that wasy and can fresh tomatoes in other ways. Plus I can make it any time of the year that I can get the peppers at a good price.

I also came up with a Golden Mushroom soup/sauce very much like Campbell's that I will post this morning. So nice to have these clone soups!

WaveMy mother-in-law bought one for me–Despite my telling her that I would not use it, because they scare me to death.  She asks me how often I use it and she just thinks they are wonderful.  Oh no, not for me.  I don't have the heart to tell her it has not even been out of the box.NoNoI will get it out of the box and rough up the outside a bit with a brillo pad if she is coming over.  One of these days, it might just come up missing–but then again, wouldn't it make a lovely wedding gift???

I am sorry to hear that because pressure canners are not dangerous if used properly. Most of the horror tales come from pressure COOKERS not canners – like my Grandmother who put salt rising bread in hers and latched the lid and set it on the counter to raise – my mother said they picked bread dough off the ceiling for day, Same grandmother also pressure cooked a full pot of split pea soup – a nio-no for a cooker – of course the vent clogged and the thing blew. Yuk.

Now if you put a pressure canner (aka PC) on a turkey fryer burner at full BTU and walk away I am sure it will blow eventually :)

Would you consider some encouragement?

The Yahoo canning group I co-own has helped MANY people through the process of getting comfortable with using a PC. Truly – and those people will tell you how they have changed to avid PC users and have wonderful goodies to show for it. Meats, soups……the possibilities are nearly endless.

Hey – my first PC'd meat was venison – now I have ham, chicken, turkey, ground beef, meatloaf, Sloppy Joes. corned beef hash, redskin taters ………

Well… we canned the chicken stock this morning and everything went off without a hitch. And I now have 8 pints of chicken stock sitting on the counter cooling.

It's really no harder than canning using a water bath canner.   You just have to babysit it more to make sure that the proper pressure is maintained for the allotted time.

Thanks everyone for all the encouragement… both directly from answering questions or indirectly by sharing your canning stories and recipes.  I've done a lot of canning over the years using a water bath canner, but this pressure canning has opened up a whole world of possibilities.  Yes

Dede or any of the other pressure canning experts out there…

I'm hoping to make a large batch of borscht if I get lucky enough to find beets at the farmers market or maybe later this fall once they're in the grocery stores and I was wondering about the timing for pressure canning it.  I will be using beef broth in addition to beets and cabbage… so I'm assuming that I'd use the timing for pressure canning beef broth since that is the longest time.  Does this sound right or is there something I'm not taking into consideration?

Mo, I am far from an expert, having only used the PC a few times now.  BUT, from everything I've read, it sounds pretty safe to use the ingredient which requires the longest processing time as your time for your recipe.  That seems to be what all the experts' opinions are that I've read so far.  And it makes sense as well.

Is the beef broth you are using previously canned, or the fresh variety?  That might be a factor.

Yes, use the processing time for the ingredient that requires the longest processing time.

Geez, sounds silly as written LOL but you both are  exactly right. This is the way to can recipes that don't have an “approved” exact recipe :)

I think someone on this forum recommended this pressure cooker.  It is the 23 qt. Presto that they sell regularly for 84 dollars, free shipping.  I  just ordered it last week and now there is an additional 10% off, so I got it for 74 dollars (plus change).  Just thought I would mention it!  I am so excited for it to arrive… going to try tomotoes.

That's the one I ordered, too!!  I love it!!  I use it for BWB and PC, I put all my other stuff away (stock pot and towel for the bottom).  I think it was one of the best investments I've made in a while!  I'm sure it's paid for itself already…….. Yes
