Pie dough making tip

To make my pie dough, I cut the butter into the flour with a food processor.  I then transfer the butter/flour crumbs to my KitchenAid mixer fitted with the paddle.  I turn the mixer on at the lowest speed and drizzle in the water (or water/vodka) a little at a time.  The dough comes together in about 30 seconds.  I have found this two-step process to be very good for not using too much nor too little liquid to bring the dough together.  I mix it just until clumps start to form that will hold together.  The mixer does a very good job at distributing the water throughout the crumbs.  If it is a warm day, I will chill the crumbs for about 10 mins in the freezer before I add the liquid.

My mom would always put ice cubes in the water she used for pie crust! Hers is always flakey.

I have never made my own pie crust before!  For some reason it scares me to death but you know, I might just try it now.  You don't use very much water at all do you. 

I might just give it a try!

Even less if you use vodka!  That method is guaranteed to make the process less painful!  Laugh

Are you asking me?  If so, then yes, I like it better than doing the whole thing in the food processor.  Maybe its just me, but with the food processor, it seems to over-work the dough, and its easy to add too much water too fast and end up with a gluey layer of dough on the bottom of the processor under the blade.  With the KitchenAid set at its lowest speed and fitted with the paddle, the "plantary motion" of the paddle just seems to distribute the water very well.  For me, its the best way to make pie dough.  I know it makes more dishes to wash, but for me its worth it (and I don't have a dishwasher).
