I want to make some dough enhancer and try as I might, I can't find licithin anywhere!
Where did ya'll buy it? Is there another a name for it?
I am about to resort to my Bio-chemist daughter! LOL

I think Pete is right about the health food store but you can also get it online at bulkfoods or Bakers Catalog.

I even misspelled it! I truly have it written down with the right spelling though…LOL
I think the only heath food store we have here in town closed down. So much for that!
Is there another name for it?

I order bulk herbs from San Francisco Herb Company. I just ordered lecithin with my most recent order. They have a 1# package for 5.95 which is a couple of dollars less than Bulkfoods. SF Herb has a wide variety of spices and herbs at very good prices. If you are like me you'll probably find a few other things you just have to have….

I ordered dough enhancer already mixed from amazon, from Barry Farms ( I think farms or was it foods?) Haven't tried it yet, I also ordered savory, I don't know why I did. Does anyone use savory??

Drugstores carry lecithin sometimes, too…look in the vitamin section. The bulk store near my house carries POWDERED lecithin, too, now…so that is what I am going to use next time, instead of the granular.

I have a bottle on my desk. My job involves nutritional supplements. These are oils in gel caps. Want me to send you a few? Lecithin, by the way, comes from soybean oil, if that helps.

We use lecithin in Suzanne's recipe for a homemade dough enhancer. It has to be a dry ingredient — powder preferably. Got any powdered?

Nope, but just out curiousity, why couldn't you use the oil? (I'm still learning bread and noted Suzanne sometimes adds veggie oil.) What does the lecithin do?

That's the link to the post Suzanne did about making the dough enhancer. It's used to help bread rise — particularly useful when using whole grains in your bread baking. The mixture is a dry concoction that you can keep in a jar on the shelf, ready to use. I have no idea if the liquid lecithin would work if you added it along with the wet ingredients when you make bread. Is the lecithin naturally a liquid? or is it dissolved in oil and encapsulated so you can take it as a supplement?

All the ingredients in Suzanne's dough enhancer are powder. That's just the way it it. Then you keep the mixture in a bottle in the refrig and use what you need when you need it. (Or should we say "knead it?" )

Lecithin is an emulsifier, so it breaks the fats up into smaller globules so that they stay suspended in the water, so it might make for a moister bread (especially whole grain) that stays fresher longer.

It's naturally an oil and has to be de-gummified to become a powder.

Thanks B…that was sweet of you to offer the caplets. But I'll just keep looking for the powder to make up the powdered enhancer.
I found a health food store in town that I am going to go to tomorrow and see if they have the powder. I'm soooo hoping they do!
