I found this link through Maple Corner's blog.
I have been searching for good lamb recipes for a LONG time - and boy does she have them. I can eat lamb cooked most ways, but my DH won't. He doesn't care too much for the “traditional” way lamb is cooked. I can't wait to start cooking these up!
AND, she has TONS of other recipes….make sure you eat first, or you'll be famished before you're done reading.

I'm actually looking for a great Dijon Rack of Lamb recipe. A restaurant by the name of Stoney River (Atlanta area) used to make this dish and I LOVED IT!!! Unfortunately, they took it off the menu so I'm set on making it myself. I hope I'm not disappointed when I finally endeavor to take this project on.

I think I have heard of a similar recipe…but maybe you can find it online?
I have cooked Lamb Chops and put lamb in homemade vegetable soup - replacing the lamb for the beef.

Here's a link to Lamb Korma - an Indian dish that uses lamb cubes with spices in a sauce. You can also get Indian sauces in a jar (Krogers carries an assortment) - so easy, just brown the lamb cubes, pour the sauce over the lamb and heat it through. I serve it with rice. My son wouldn't believe it was lamb and insisted it was beef. I could tell the difference, but it was subtle.

The page has links to other Indian dishes, and many use lamb as a main ingredient. You'll also find traditional side dishes and sauces you can serve with the korma to make it a totally Indian meal. I ate a lot of Indian food in London the last time I visited a friend there, and I developed a real taste for it.

By the way, the ghee called for in the recipe is clarified butter. With the milk solids removed the butter keeps well, and doesn't smoke and burn when you cook with it. And another thing about the recipe - I like my korma more “saucy” so I add water until it has a little liquid - even better with the rice. You can also use an Indian curry mix instead of grinding all those spices. It's available in an envelope (like onion soup mix) and I find it at Krogers, too.

Until I was 3 I had horrible food allergies. My mom said the only meat I could eat was lamb, so she would cook that just for me. She was glad it was lamb cause that was considered “trash” meat, and only pennys a pound. Not so anymore! But I also havent eaten it since then and have no idea what it tastes like. I cant make myself pay that much for something I dont even know if we will eat or not.

My mother made a leg of lamb once, but she didn't care for it…so that was it for us. LOL
I had some little lamb chops…they are okay..nothing to write home about, to me and expensive. Just something different. Same with Cornish Hens, very overrated, to me. But CUTE< so I eat them. LOL

I cant believe tomorrow is finally the “D” day for my chickens. And it has rained all day today and maybe tomorrow, that ought to be fun. I am planning to set up under our 10×20 covering in the back yard. Now I am getting nervous about actually having to do it. I'm going to take (or have someone) a lot of pics, I'll weed thru and post the not to gruesome ones if anyone is interested. Maybe we will have fresh baked chicken with rosemary for supper. mmmmmm

I wish you could take video — I've read the books, but there is nothing like watching someone go through the process. Yes, it's hard to look at, but if you eat chicken, unless you like yours running around with the feathers on, your chicken was killed, gutted and plucked. I'd just like to have someone looking over my shoulder the first time I give it a go. Wish you lived closer to WV.
