I recently have stopped eating canned food (BPAs and all of that. They creep me out.) But I love the flavor you get from cooking with cream of mushroom soup, or other canned soups for that matter. There are so many good Thanksgiving recipes that call for a can of cream of something soup. Does anyone have an alternative to the canned soup that DOESN'T come in a can? Thanks!

Hi Lisa, I have made cream of chicken and also mushroom soups before by starting with chicken broth and adding light seasonings if you want and as you simmer it slowly, I add heavy cream. you can tell how much by the color and consistancy. Then add cornstarch or flour to thicken it as thick as you like. I usually start with a beef broth for the mushroom soup and do the same.

Hi Lisa, Check out a website/blog called tammysrecipes she has a great cream of chicken recipe that you can make and freeze ahead of time (which can be a life saver when you are cooking a big meal like Thanksgiving dinner) . I love the benefits of making things from scratch. It healthier, we can control what we feed our family. In our family we love to recycle, so if you freeze in reusuable containers No extra trash sent to the landfill to last 1000 years. But back to the subject.. I really like all the recipes I have tried at Tammys. Good luck recipe hunting!

Hi Lisa. I feel your pain. I have gone completely unprocessed and I missed these things the most. I have had to redo alot of my recipes. I found that I make my own broth…it cans very nicely and then like Georgia said…add seasonings and thickener…and cream. It is delicious and if you can the broth it as convenient also. Well, almost, but worth anything to be unprocessed. Some recipes I am still tweaking to get close…others are perfect. Good luck.

I was going to say…I found a great cream of mushroom soup, online one time. I know there are homemade soup recipes out there, like Georgiaz's above…

I have made it twice and it freezes well. It makes way more than my husband and I can eat. I plan to make it next week to substitute for the canned cream of mushroom soup in the traditional Thanksgiving green bean casserole. I also refuse to use canned green beans and cook mine fresh. Who knows, I might even try making my own fried onion topping as well.

Thanks for your help! My freezer's tiny, but I love to cook ahead and freeze. Makes things so much easier. I know with so many different people bringing dishes to Thanksgiving that I'll have to eat some canned food, but I figure every little bit helps. Thanks!
