Its in the oven baking …. wow, it makes a lot.  Mind you, I can't get 10 ounces of tomatoes, I get 14 so I presume that the 2 cans of refried beans is a larger amount than its US counterpart …. so I got out the reallly big baking dish !!

I know my pan is larger than 9x12, I want to say 13 X 15 and it's still full.  The leftovers are the best, I agree.  I can get 4 layers in my pan. 

btw, I threw a can of Mexicorn in this time.  It was yummy too!

Wonderful tasting casserole, I give it an 'A' for flavor, but I need to tweak the ingredient amounts to get a nice presentation.  As I made it, it is too soupy and it made the tortillas soggy.  I think next time I will drain the tomatoes, use less refried beans, and bake it in a differnt dish, wider and not so deep (if that makes sense)

I will definitely be making it again.  I served it with avocado and sour cream.

The tomatos I use are Rotel (tomatoes and green chillies).  I don't drain them tho.  I drain and rinse the beans, that's all everything else just gets dumped in.

I wish we could get Rotel here.  I did drain the beans.  Maybe I should have let it simmer longer …. a few things to try next time.  It tastes wonderful, which is the key thing !!

Shells, my answer for any dish that has cheese in it that is a bit too loose is to add more cheese.  We live by a philosophy here that there is no such thing as too much cheese in or on anything!  Teehee.  Fork

Just a few more minutes and we will FINALLY try this!  Next time I may try using 3 8x8 pans instead of one big one.  Then can cook one and freeze two.  This tastes (just from licking the spoon!) like something I could eat every day!

It's not all that unusual to taste stuff as it is being fixed, but this thing nearly didn't get assembled!  Wow!  We will indeed make this often.

We have avocados, but I was so busy eating the pie that there is no more room for the lovely avocado…

I made this Saturday for my WHOLE family and they just loved it!!!  It's going to be one of the meals when we're all together from now on!  So easy to put together and serves everyone!  I did save back a piece so I could have the next day and it was even better — all the flavors intensified!
