Yogurt Ambrosia

Yogurt Ambrosia

 

2 cups small curd cottage cheese

1 cup lemon yogurt

1 package (3 ounces) lemon gelatin

2 cups miniature marshmallows

2 cans (11 ounces each) mandarin oranges, drained

1 can (15 ¼ ounces) pineapple tidbits in juice, drained

1 cup halved seedless red grapes

1 cup flaked coconut, divided

 

In a medium bowl, stir cottage cheese and yogurt until blended. Sprinkle gelatin over mixture; stir until well mixed.

 

Stir in marshmallows, oranges, pineapple, grapes, and ½ cup of the coconut. Cover and chill at least 4 hours or up to 24 hours.

 

To serve, stir ambrosia gently. Sprinkle with remaining coconut.

 

Yield: 16 (1/2 cup) servings

 

Haven't tried this yet because I don't have all the ingredients!  But, can tell already that it is something I will really, really enjoy, and I want it NOW!!

Will do.  Am also thinking that plain yogurt would probably be just fine, with maybe a splash of lemon added.

Am I alone, or is it getting harder to find just plain yogurt?  I was looking for a starter for making some goat's milk yogurt, and all I could find was flavored — shelves and shelves of various brands and flavors, but not ONE carton of just plain yogurt.  I've also noticed that you can't buy yogurt unless it's non-fat or at least low-fat.  What about just making yogurt out of milk.  Period.  Not everyone that eats yogurt is eating it for their digestion or because they need to watch their weight.  Nothing wrong with either use, but I just want plain, regular YOGURT!

We can still get it rather easily around here.  Maybe because of the number of cooks and chefs around?  But, there sure is a variety of other yogurts available.  Amazing number of flavors, degree of fluff, fruit on the bottom, mixed in seven different ways, etc.

Easy to get plain yogurt here, its all I use.  We also have a lot of local farms that make and sell yogurt and it is so much better than the stuff from the supermarket with all the fillers and gels and what not.

What I do have a hard time finder is kefir ….. which reminds me, I have some starter so I should start a bottle of it tonight.

I can get plain yogurt, but only in the big  (24 oz.?? size)  we can make it whatever flavor by adding jam.  They often have artificial sweetners too–which would be total ick in homemade yogurt.  Isn't the sugar added to feed the bacteria much the same as yeast for making bread?

If you ever get a chance, get a starter of Filia from a Finnish neighbor.  It has the consistency of kefir, but to me it has the taste of cottage cheese.  You can add fruit and it's very good.  You can also make smoothies with it.

I have never heard of Filia, but then I don't think I have a Finnish neighbor either, but will keep my ears open for it

You'd have to live in a little Finnish enclave in northern Minnesota — then you'd know filia.  Other than that, you'd have to go to Finland I suppose.

Have you tried this yet, Pete?  I made this one year at Thanksgiving in place of one of the jello salads that we just have to have, and everyone love it!!
