Tomato Soup

3 gallons homemade tomato juice
Finely chop in food processor, then measure:
2 cups green peppers
2 cups celery
2 cups onion

Bring to a boil, reduce heat and simmer until veggie bits are tender.
Add:
1 cup sugar
3 Tbsp. salt
½ tsp. white pepper

Bring back to a boil, add:
1 cup Clearjel well mixed with 1 cup cool water, stirring as you add.
Simmer a few minutes, stirring all the while.
Add 8 ounces butter and stir until it's melted and well incorporated.

BWB 40 minutes

Sounds good!  Does this need to be reconstituted when used?  Doesn't look like it, but you're the expert!  And it looks like it would make a BUNCH of quarts.  Cool

It's ready to eat. Makes about 12 quarts, but I can it mostly in pints and we like to take one to work for lunch in the winter once a week. The recipe I made for years has veggies cooked with the tomatoes, then all is juiced. I like this one even better because there is some texture.

And there is WAY less sodium than commercial soup Shimmy

This would also work great if someone has tomato juice from a few years back that they want to use.

Dede… we've decided to turn some of that tomato juice we got the other day into soup.  The 40 minutes… is that for pints or quarts?

Pints. Quarts I  would BWB 45 mnutes. Sorry I didn't check in here earlier – BUSY day – 12 hour work day in fact :)

Oh good, because that's what we ended up doing.   You'd mentioned that you mostly did pints, so I was kind of thinking that the 40 minutes was for pints.   So then I added 10 minutes for the quarts.  The recipe gave us a 7 quarts, 8 pints and enough left to have with supper.

It was really good. 

And will be so great to have the pints on hand for lunches since it's just me most days at home for lunch.  The quarts, I'm thinking I'll probably use as a base for a quick supper soup on nights when I just don't feel like cooking from scratch.  Put the soup in a pot, dump in a bag of frozen veggies and maybe some leftover meat, heat and supper will be ready.
