Sausage Dressing

2 lbs ground pork sausage( I like Jimmy Dean Sage )

1 stick of butter 

4-6 stalks chopped celery

2 med onions, chopped

3 (1 pound) loaves cheap white bread, torn into small pieces(Dry the bread on a cookie sheet overnight or toast) Not Wonder bread

1 tb Poultry seasoning  

4 beaten Eggs

2 or more cups chicken broth  

2 small cans of mushrooms drained & chopped finely 

Place pork sausage in a large, deep skillet. Cook over medium high heat until evenly brown.Add mushrooms until heated. Drain and set aside.

Melt the butter in a large saucepan over medium heat. Place the celery and onions in the saucepan, and slowly cook and stir until tender.

In a large bowl, place the sausage,mushrooms, celery, onions, bread, poulty seasoning, salt and pepper.

Beat the eggs in small bowl and mix into the sausage mixture.

Pour broth into the mixture. Use more broth if needed. The stuffing should be moist, not too mushy.

Place mixture in greased  baking dishes. Cover and bake at 325 degrees F for 1-1/4 hours. Uncover and bake 15 minutes longer or until heated through.
