My Mother's Cheesecake

Crust: 1 and 1/2 cup Graham Cracker Crumbs

           1/4 cup sugar

            1/2 stick butter

Filling:  3 (8 oz.) pkgs Cream Cheese

           1 and 1/2 cup sugar

           4 eggs

           1 tsp. vanilla

           1/8 tsp. salt

Topping:  2 cups sour cream

                1/4 cups sugar

                2 tsp. vanilla

1. Let cheese soften. Blend in 1 and 1/2 cup sugar, add salt, beat until fluffy. Add eggs, one at a time, beating well. Beat in 1 t. vanilla and pour into crust. Bake 350 degrees for 50 minutes or firm in center.

2. Remove from oven and cool for 15 minutes. Reset oven to 450 degrees.

3. Combine sour cream, 1/4 cup sugar and 2 tsp. vanilla, spread on top of cake. Return to oven and bake 10 minutes. Cool and chill.

This was my family's fav dessert my mother made (or one of them). She used a Springform pan to bake it in. It serves 12-16. Sometimes she put canned cherry pie filling on top. I preferred it plain. My hsuband's mother makes cheesecake tarts, that are wonderful. You know, with the vanilla wafer, at the bottom of the cupcake paper holder?
