OK… time to start sharing…. this recipe is from the cookbook Potluck at Midnight Farm. 

The recipe is From Eleanor Johnson.   This is a staple at our house….

1 lb ground beef

1 small can tom paste

1 (8 oz) can tomato sauce

1 teas sugar

12 oz egg noodles

1 TBSP unsalted butter

1 cup sour cream

3 oz cream cheese (at room temp)

1 bunch scallions finely chopped

8 oz cheddar cheese

Heat oven to 350.

Saute meat until lightly browned in a large skillet over medium heat, breaking it up as it cooks.

Add the tomato paste, tomato sauce and sugar.  Fill the tomato paste can with water and stir it into meat mixture.  Simmer, covered, for 15 to 20 minutes. 

Cook the egg noodles according to package directions and drain and return to the pot.  Stir in butter.

Mix the sour cream, cream cheese and scallions in a small bowl.

Make 2 layers of the ingredients in a large casserole dish (I use 9×13), as follows:

Spread a little sauce over the bottom of the dish, top with a layer of noodles, dot with 1/2 of the sour cream mixture, then cover with 1/2 the sauce.  repeat with remaining ingredients.  top with cheddar cheese.

Bake 45 – 50 minutes until mixture is bubbly and cheese is lightly browned.

Note:  When I make this, I usually double the amount of the sour cream, cream cheese.  I have also made this with both fat free sour cream and cream cheese  and it comes out fine.

Sounds yummy!   Will definitely be trying this soon.  Since we only buy 8oz packages of cream cheese, guess what I would probably use…. French

when I make this I use the whole 8 oz pkg of cream cheese and a 16 oz container of sour cream – whole container, no leftovers… I should have been more specific in the note…..

Sun  it is good…. was kinda wishing i made it for supper tonight myself – grilled cheese just didnt do it tonight….cold and rainy weather up here tonight in NH….btw it know its off topic but, I think you mentioned that you have a pit bull ?  we do too…. lab / pit mix  Ms Holly…. she's a sweetie… the "old Lady" of the house i'll have to post some pics sometime
