Mighty Chicken

A Thanksgiving and Christmas tradition at my house.  Serve before the meal with white wine, beer, or not-to-sweet cocktails. 

1/2 pound cooked crab meat, carefully picked over to remove shell and cartilage
2/3 cup mayonnaise OR 8 oz. cream cheese
1/2 cup artichoke hearts, drained and chopped OR 1/2 cup spinach, drained and chopped
1 teaspoon fresh-squeezed
lemon juice
1/2 cup freshly grated parmesan cheese
1/2 small onion, grated

Baguette bread or thin crackers

Preheat oven to 350 degrees F.

In an ungreased  2-cup baking dish, combine crab meat, mayonnaise or cream cheese, artichoke hearts or spinach, lemon juice, parmesan cheese, and onion.  Stir gently to prevent turning into mush.

Bake, uncovered, 15 to 20 minutes or until thoroughly heated. Remove from oven and serve immediately with warm sliced baguette or crackers.

Makes 10 servings.

MMMMmmmmm…… hot crab dip is so good and I will have to try this one.  I can get fresh crab off the boats at the dock this week.
