I guess these are cookie BARS:
Hello Dollies
1 stick of melted butter
1 cup Graham cracker crumbs
1 cup coconut
1 cup chocolate chips (I prefer milk, but mother used semi sweet)
1 cup broken pecans
Melt butter and pour in 9×9 inch pan. Sprinkle on graham crumbs and smooth out, to crust. Over this add the above ingredients in the order given - coconut, then chips, then nuts. Over all of this, drizzle 1 small can of Eagle Brand milk and bake at 350 degrees for 30 minutes.

Dutch Letters (S For Santa or St. Nick) Dough 2 C. flour 1/4 tsp salt 1 cup (2 sticks) butter, chilled and cut into small pieces 1/2 cup cold water Place flour and salt into bowl,cut butter into flour using a pastry cutter. Add water a little at a time just until dough comes together. Turn dough out onto a sheet of plastic wrap, flatten it out into a rough rectangle and fold it onto itself in thirds (like a business letter). Chill at least two hours before using. Filling 8 oz. almond paste 1 egg 1/3 cup sugar 1/4 t almond extract 1/4 t vanilla extract Place ingredients into bowl, mix them together in a bowl using a wooden spoon. Place filling into the center of a piece of plastic wrap and chill at least one hour before using. Assembly and Baking 1/2 cup cream 1/3 cup sugar 1/4 cup powdered sugar Preheat oven to 375 degrees and line two baking sheets with parchment paper. Cut filling into sixteen pieces and roll it between your hands to make ropes (if it sticks, use some powdered sugar on the filling and on your hands). Cut dough into sixteen pieces and roll to a rectangle about 5-6 inches long and about 1-1/2 inches wide with a thickness of about 1/8 inch. Place filling in the center of the dough, fold the short ends of dough over the filling and roll up jelly roll style. Shape the dough into letters and place on lined baking sheets at least one inch apart. Brush with cream and sprinkle with sugar. Bake for 20-25 minutes until cookies are golden brown.

Eggnog Snickerdoodles 1/2 C. butter, softened 1/2 C. shortening 1 1/2 C sugar 1/4 C sugar(for rolling balls) 2 eggs 1/4 to 1/2 tsp rum extract 2 3/4 C all-purpose flour 2 tsp cream of tartar 1 tsp baking soda 1/4 tsp salt 2 tsp ground nutmeg In a mixing bowl, cream butter, shortening and 1-1/2 C. sugar until light and fluffy. Beat in eggs and extract. Combine the flour, cream of tartar, baking soda and salt; gradually add to creamed mixture. In a shallow bowl, combine the nutmeg and remaining sugar. Roll dough into 1-in. balls; roll in sugar mixture. Place 2 in. apart on ungreased baking sheets. Bake at 400° for 10-12 minutes or until lightly browned. Remove to wire racks to cool. 6-1/2 dozen.

I made these and froze them this week - they are really yummy!
White Chocolate Cranberry Cookies (Makes about 4 dozen)
1 cup butter, softened 1 cup firmly packed light brown sugar 1 large egg 1/4 cup milk 2 cups all-purpose flour 1/2 teaspoon baking soda 1/2 teaspoon salt 2 1/2 cups quick-cooking oats 2 cups dried cranberries 1 (11-ounce) bag white chocolate morsels
Preheat oven to 350 degrees. Line baking sheets with parchment paper.
In a large bowl, beat butter and brown sugar at medium speed with an electric mixer until creamy. Add egg and milk, beating to combine well.
In a medium bowl, combine flour, baking soda, and salt; gradually add to butter mixture, beating until combined. Stir in oats, cranberries, and white chocolate morsels. Drop batter by rounded tablespoonfuls onto prepared baking sheets. Bake for 12 to 14 minutes, or until lightly browned. Let cool for 2 minutes on baking sheets; remove to wire racks and cool completely.

I love these - I make orange cranberry cookies and use the orange cranberry bread mix and have for years but this yr I have not seen it out yet. this is a great substitute. I may add orange peel in these. they are really good.

Chewy Ginger Snaps 1/2 cup butter, softened 1 cup sugar 1 egg 2 tsp. baking soda 2 cups flour 1/2 tsp. ground cloves 1 tsp. ground ginger 1 tsp. cinnamon 1/2 tsp. salt 1/3 cup crystallized ginger, chopped coarsely (tip: put chunks in food processor with about a Tblsp of flour and chop) Preheat oven to 375 degrees. Combine softened butter, sugar, molasses and egg. Stir until mixed well. Stir in crystallized ginger. sift dry ingredients together. Add to wet mixture. Mix well. Form 1 inch balls. Roll in granulated sugar. Place on greased cookie sheet, 2 inches apart. Bake 8 - 10 minutes. Makes 3 dozen cookies.

Cinnamon Roll Cookies 1 pouch (1 lb 1.5 oz) Betty Crocker® sugar cookie mix 1/2 teaspoon ground cinnamon 1/2 cup butter or margarine, softened 1 egg, slightly beaten 1 tablespoon ground cinnamon Glaze 1 cup powdered sugar 2 tablespoons milk 1/4 teaspoon vanilla 1. Heat oven to 375°F. In large bowl, mix cookie mix and 1/2 teaspoon cinnamon. Stir in butter and egg until soft dough forms. 2. On piece of waxed paper, shape 1 tablespoon cinnamon into a line about 5 inches long. Using floured fingers, shape 1 tablespoon of dough into a rope 5 inches long. Press one side of dough rope into cinnamon. 3. On ungreased cookie sheet, coil dough rope tightly, cinnamon side facing center, into cinnamon-roll shape. Press end of rope into roll to seal. Repeat with remaining dough. Place cookies 2 inches apart on cookie sheets. 4. Bake 7 to 10 minutes or until edges are light golden brown. Cool 1 minute; remove from cookie sheets to cooling rack. Cool completely, about 15 minutes. 5. In small bowl, mix glaze ingredients until smooth. Drizzle over cookies.
High Altitude (3500-6500 ft): Decrease butter to 1/3 cup.
