Eggnog Fudge & Pumpkin Fudge

EGGNOG FUDGE -

1/8 c. chilled butter                                 3c. sugar

1c. eggnog                                            6 ounces white choc chips

1 1/2 c. mini marshmallows                   1 c. chopped pecans

1/2 tsp nutmeg                                      1/2 tsp cinnamon

butter a 9 x9 dish.  Mix eggnog, and sugar in sauce pan.  Bring to rolling boil over med to med high heat, stirring constantly.  Boil for 2 min.  Fold in the marshmallows, and spices.  Bring back to rolling bpoil for another 6 min, stirring constant.  remove from heat and add the butter, chips and nuts.  stir until mixed and gloss is gone.  pour into prepared pan, cool and cut

PUMPKIN FUDGE

2 c sugar                                            1 – 12 oz pkg white chips

1c. firmly packed br sugar                   1 – 7 oz. jar marshmallow creme

3/4 c. butter                                       2/3 c evap milk

1 c. chopped pecans                          1/2 c. pumpkin

2 tsp pumpkin pie spice                       1 1/2 tsp vanilla

butter a 9 x 13 pan.  combine sugar, brown sugar, butter, milk, pumpkin, spice.  Heat over med heat until sugar dissolves, stirr frequently.  continue heating until mixture begins to boil, stir constantly.  continue boiling until candy thermometer reaches soft ball stage 234-243.  remove from heat.  stir in chips until melted.  add marshmallow creme, pecans and vanilla.  stir well.  pour in to pan.  cool.  store leftovers in frig. 

both of these are unreal and soooooooooooooo good. 

found this in southern living

place whole pumpkin pie in freezer for 1 hour.  cut slices and chop them into pieces.  allow 1/2 gallon of vanilla ice cream to soften in a bowl.  add the pumpkin pie pieces.  scoop into dessert dishes, drizzle with caramel topping and top with pecans.  YUM
