A discussion developed over in "What's for Dinner" about dirty rice.  Chris posted his method.  Perhaps other posters have versions of dirty rice they would like to share?

It all depends whats in the fridge!

It always has the holy Trinity, Bell Pepper, Celery and Onion; this last time it was:

1/2 lb. Minced Beef (Ground)

1 Chorizo Sausage

3 Rashers of Bacon

2 sticks of celery

1 clove of garlic

1/2 Red Pepper

1/2 green Pepper

1 medium sized onion

Livers from two Pheasants

1.1/2 cups of Rice

two cups of water

a few dried Chilli Flakes

I always make a large one, as

 a. its easier

 b. leaves 1/2 for the next day,when to my mind it tastes better!

 c. Helps keep the fridge tidy.
