This is super easy and really good, I got it from a good family friend who cooks A LOT and has a garden that is about an acre is size.

In a standard crockpot mix:
2 green, sweet peppers, chopped
2 medium onions, chopped
9-13 jalapenos (or to taste. this was a bit much for me, so I used 6)
10-14 ripe tomatoes (10 fairly big ones or 14 medium sized ones) chopped, peeled and seeded

In a separate bowl, mix:
1 T salt
3 T mexene chile
1 1/2 t cumin
1 t coriander
1/3 C sugar
1 T garlic powder
Now, mix into tomato mixture

Cook all in the crockpot on LOW for 6-8 hours (I leave it overnight). Then turn it on high. I like to add a can of black beans and a can of corn at this point (adds a little color).  When it starts to bubble, mix in 1/2 C vinegar + 7 T cornstarch (ClearJel is the approved thickener) to thicken it. Stir well. Let it bubble for 10 minutes.

This is great – do you put the jars in a water bath and seal them to save?  this would be a great gift idea.

Oh definitely…forgot to add 10 minutes water bath, follow Suzanne's instructions.  And it is wonderful for gifts!
