If you are looking for a delicious way to use cranberry sauce, make it into a crunchy dessert. Courtesy of My Nanny Ruby McGhee whom I miss with all my heart.

Cranberry Crunch

1 cup regular uncooked rolled oats

1/2 cup all-purpose flour

1 cup dark brown sugar

1/2 cup shortening (butter or oleo)

1 16 oz (1 lb) can of cranberry sauce Jelled

Grease an 8x8 inch baking pan. Heat oven to 350. In a large bowl mix well oats, flour and brown suger. Cut in shortening until mixture is quite crumbly. Press half the mixture into the bottom of the pan. Spread cranberry sauce carefully over the mixture. Press on lightly with fingers. Bake for 45 minutes. Cool slightly on rack, then cut into squares.

Its great topped with vanilla ice cream or whipped cream!
