1 c. flour

1 tsp. baking powder

1/2 tsp. baking soda

1/4 tsp. salt

2 tbsp. sugar

1 egg

2/3 c. buttermilk (can use regular milk)

2 1/2 tbsp. maple syrup

2 tbsp. melted butter

3/4 – 1 c. mini chocolate chips (or 1/2 c. to 3/4 c. regular choc. chips)

Preheat oven to 350.  Grease or line 2 12 cup mini muffin pans. 

Combine first 5 ingredients in a medium sized bowl.  Whisk together. 

In a second bowl stir together egg, buttermilk, maple syrup and melted butter until combined.

Add wet ingredients to dry and stir until just combined.

Fold in chocolate chips.  Drop into muffin cups.

Bake for 8-9 minutes.

(I have also made in regular sized muffin tins.  Bake for 10-12 min.  Will make 12 regular sized muffins)

My son would eat these every day for every meal.  I make up a bunch for quick breakfasts in both sizes and freeze.  Also good is to drizzle with additional syrup while warm.
