Chicken 'n' Orange
 
2 to 3 boneless chicken breasts
1/2 cup flour
salt & pepper to taste
olive oil for frying
2 to 3 tbsp. butter
juice & a little pulp from 1 orange
2 heaping tbsp brown sugar
a few sprigs fresh sage
 
Cut chicken in chunks.  Combine flour, salt and pepper.  Dredge chicken in flour mixture.  Add olive oil (enough to fry chicken without burning) to a large skillet and heat.  Fry chicken till done.  Remove from pan and set aside.
Wipe out pan.  Add butter.  Melt in pan.  Add the orange juice, a little of the orange pulp, the brown sugar and the fresh sage to the pan.  Mix well.  Stir in the chicken and simmer (about 5 minutes), just until the chicken is well coated and heated through.  Remove sage.  Serve as is or over rice.
 
Note:  If fresh sage is unavailable, a couple of shakes of dry sage can be used.
