Cherry-O Cream Cheese Pie
1 (9 inch) graham cracker pie crust
1 (8 ounce) package cream cheese
1-1/3 cups (14 ounces) Eagle Brand Sweetened Condensed Milk
1/3 cup lemon juice (squeeze your lemons…it's better using real)
1 teaspoon vanilla extract
1 can cherry pie filling
Let cream cheese soften…then beat until fluffy. Gradually add Eagle Brand Milk while mixing; stir until blended. Add lemon juice and vanilla extract; blend well. Pour into prepared crust. Chill 2 or 3 hours…add cherry pie filling to top…sprinkle some graham cracker crumbs on top of pie filling.

That's the "cheesecake" my grandmother made for special occasions. I'd forgotten all about it. I have all the ingredients — and I may have to make one and eat it all by myself. Okay, maybe I'll share a sliver with Mike…

Ever try strawberries? Fresh would be great, but I'm talking the strawberries in the glaze like they use in strawberry pies. Oh My – YES!

Ooooo, a different twist on the "no bake cheesecake"! We always make 3 — 1 cherry, 1 blueberry, 1 strawberry for the family get togethers!
Will definitely try this version for the 4th of July — in a big cake pan with the fresh blueberries and strawberries for the flag.

Maybe triple it…you can always make a mini something with anything left over…but not having enough of something just upsets me.
I like this with cherries…and it would be fine with blueberries…not sure about the strawberry/lemon combo…but if you try it, let me know!
Just use real lemons…I made it with the stuff in the bottle one time…and it was so bitter! I didn't put quite 1/3 cup of juice in yesterday…I used fresh squeezed, strained juice…so much better! (Taste as you go!)

We are doing a pot luck sort of camping Fourth of July thing, and this might be perfect to take for the communal meal – using the big pan, tripling the recipe, with the cherry pie filling for the red/white part and fresh blueberries for the stars part of the flag.
Yep. Sounds very good. (I may get lazy and just take enough boxes of graham crackers, Hershey bars and marshmallows for everyone!)

This makes up very fast … I buy the box of graham cracker crumbs and go from there. Just make it the day before – you want it to "set up" well.

You can also use this for minis- Just put a Nilla wafer in those small foil cupcake things instead of a crust , I have seen them at all sorts of events where finger foods were served.

Ok, I waited as long as I could……..this was amazing!! I let it set up for almost 2 hours, it was set enough to keep shape, so it's fine!! A very nice lemony flavor, definitely worth squeezing the lemons and using fresh vs. bottled
