Bubble and Squeak


Used to be the mainstay for a Monday lunch. It consists of all the leftover vegetables from a large roast Sunday lunch,which on the farm during the war,were never wasted,so depending on the meal you might have cabbage,sprouts,swede,leeks etc,plus potatoes,roast mashed or boiled.All roughly mashed in a large bowl.Then heat a large heavy frying pan ,some lard pile in, firm down and fry ,turn once and the secret was to get that crispy caramelised layer on the bottom. Served with cold meat left over from the joint. pickles or HP sauce. Easy Peasy lunch on a Monday,which was usually washing day.Im talking of the days before washing machines, so it was easy for Mother and quick,plus it was a favourite.A bit like Xmas lunch.Turkey,Ham,Vegetables, Sauces, Xmas Pudding.A very hectic time in the kitchen. But I have always preferred Boxing Day.Cold meats,Mashed Potatoes and Pickles.

I lived in Oklahoma for awhile and my best friend Annie married a serviceman and moved to the states from England.  She taught me to make Bubble and Squeak and I will say that I love it.  I often make sure that I will have enough leftovers so that I can make Bubble and Squeak.

Always had the impression that Bubble & Squeak is to the Brits very much like Hash is to us colonists.  Both seem to cover a multitude of culinary concoctions greatly dependent on what's in the refrigerator and what part of the country you are in.
