Oops, that was supposed to be Banana NUT Bread.  
Ingredients
- 1/2 cup butter at room temperature
- 1 cup or less light/golden brown sugar
- 2 eggs, beaten
- 1 tsp. vanilla
- 2 cups Spelt flour
- 1 tsp. baking soda
- 1/2 tsp. salt
- 2 or 3 very ripe bananas, mashed
- 1/2 cup chopped pecans
Directions
- Pre-heat oven to 350 degrees F.
- Beat butter and sugar together until creamy.
- Add eggs and vanilla and beat well.
- Stir in dry ingredients.
- Blend bananas and pecans and mix gently.
- Bake in a well greased and lightly dusted 5 x 9 inch loaf pan or three 3 x 5 inch loaf pans.
- Bake for one hour or until toothpick comes out clean.
- Lessen the baking time for the smaller loaf pans.
- NOTE: When using spelt flour as a substitute for All-purpose or whole wheat flour, always remember that spelt requires approximately 25% less liquid. You can either reduce the liquid by 25% or add 25% more spelt flour than your recipe calls for.

Spelt is a grain related to wheat and was probably originally a chance hybrid of wheat and a grass grain. It was used as the main grain from ancient history but today it isn't widely grown. Since it is a wheat grain you can't use spelt as a substitute for wheat if you are allergic to wheat. It contains less gluten than modern wheat, but can be used to bake bread (obviously — see the picture above) but it may need help to rise as well as a regular wheat bread. It's most often found in health food stores, or ordered from the internet. It is nutritious, and important to keep our food sources diversified. (The more options we have, the less likely any one grain will be wiped out as a food source and leave us without an alternative.)

They do, Amanda. Better price at the Amish Farms bulk store, if you are in the neighborhood. Foodland may still have some (I haven't looked in ages) with the other specialty flours display. (Not enough difference in price to drive across town for, last time I compared the prices.)

I am going to drug emporium in Kanawha city after work to pick up my Grampas prescriptions so I'll just run on up to the Amish bulk store and check it out. Thanks!
