We loved this. The chicken was moist and very flavorful.

Baked "Fried" Chicken Legs

10 chicken legs

1/2 – 3/4 cup of bottled Buttermilk Ranch Dressing

1-2 tablespoons of Dijon Mustard

1 teaspoon of Poultry Seasoning

1 1/2 cups of dry bread crumbs (I used crumbs from stale French bread, that I dried myself)

1/2 teaspoon of salt

Pepper to taste

Cooking Spray

Combine dressing and mustard. Pour over chicken legs and stir until chicken is well coated. In a flat bottomed bowl, combine bread crumbs, poultry seasoning, salt and pepper. Roll chicken legs in crumbs until well coated. Place in a baking pan and spray lightly with Pam cooking spray, then bake at 375 for 40-45 minutes, or bake in your Nu Wave Oven (which is how I did it) for about 25 minutes, turning half way through baking time. I started them on the 4 inch rack, but they started to brown too quickly, so I put them on the 2 inch rack and they finished beautifully. They were moist and crispy and perfect!
