These are yummy chocolaty.  I got the recipe from my inlaws Amish neighbor.  She would make them for us whenever we came to visit the inlaws.

1 1/2 lard

3 C Sugar

3 Eggs (well beaten)

1 1/2 C Buttermilk

1 1/2 C. Cocoa

5 C Flour

3 t.  Salt

3 t. Baking Soda

1 1/2 C. Hot Water

2 t. Vanilla

Cream Lard & Sugar together. 

Add well beaten Eggs and Vanilla

Sift the Flour, Cocoa and Salt together

Add Flour, Cocoa and Salt mixture to the Lard/Sugar/Eggs/Vanilla mixture, alternating adding the buttermilk. 

Dissolve the Baking Soda in the Hot Water and add to the Lard/Sugar/Eggs/Vanilla/Flour/Cocoa/Salt/Buttermilk mixture.  Mixture will be kind of like Cake Batter.

Drop by Spoonsful (I use a big Tablespoon) on a Cookie Sheet. 

Bake 350 degrees for 8 -10 minutes.

Cool on wire rack and fill two cookies to make a sandwich with filling from recipe below. 

This freezes well.

FILLING

3/4 C. Butter, Softened

3/4 C. Shortening

2 – 7 oz. jars of Marshmallow Creme

4 C. Powdered Sugar

4 1/2 t. Vanilla

Beat Butter & Shortening together until well blended.  Gradually add Marshmallow Creme.  Add the Powdered Sugar and Vanilla.  Beat to spreading consistency. Use a large spoonful to make a Whoopie Pie.

Makes 4 1/2 dozen.  If you use a teaspoonful of dough and make a smaller cookie, the recipe yields more.  Bake the smaller cookies 6-8 minutes.
