Amana Ox Yoke Rhubarb Custard Pie Makes 2 pies
10 1/2 C. chopped rhubarb (or 5 1/4 C. strawberries and 5 1/4 C. rhubarb) 4 1/2 C. sugar 9 eggs, beaten 3/4 C. half-and-half 3/8 tsp. salt
Make crust for 2 pies. Put bottom crust into pans. Sprinkle each crust with 3/4 teaspoon flour. Mix above ingredients and pour into crusts. Bake at 375°F for 1 1/2 hours or until set.

What an interesting name. I know the Amana probably comes from the Amana Colonies near you, but I wonder why the Ox Yoke? Sounds like a yummy pie tho!

I didn't think of that, it could be. It's been 40 years since I was in the Amana colonies.

Yes, there are two restaurants there, one in the Colonies, which is the best and is in a landmark building that used to be a communital Kitchen. German and American cuisine served in refillable family style bowls. The other is an Interstate one on I-80 . If you go there try some local rhubarb or cranberry wine with your meal. Anyways I love the pie!

I think I ate in the communal one! I remember because we sat with other people we didn't know. That kinda freaked me as a kid, but now it's kinda fun!
