5 Hour Stew

In a dutch oven, brown 2# stew meat, add chunked potatoes, carrots, celery, onion and 1 handful of

barley.  Salt,  pepper, and 1 large can of tomatoes.  Pan should be full, add enough water to cover and

bake at 250 for 5 hours or until done.


This is my favorite soup.

Ya know, if I have ever had anything with barley in it – I did not know it.

You might not know it…I think people think it's a strong taste…but it isn't.  It's filling and yummy!

…and there is a quick cooking (like oats) and a regular.  For this recipe, you'd need the regular.  I seldom use instant or quick anything…that's just me.

There's that "bad influence" Dede – got me looking at this recipe wondering about cooking it maybe only three hours, then canning it.

Well, that and maybe doubling it.

And of course pondering that if it wasn't quite thick enough, adding some clearjel…

You have to be careful when canning grains (pasta also). They are very dense and the heat doesn't penetrate evenly in the jar. Not USDA approved.

Now, having said that :)

I have and do can small amounts of rice, barley, pasta in soups. Small amounts. Works just fine and I am comfortable with it since I keep the soup texture loose so that the heat penetration will be even.
