I just made those cookie ice cream sandwhiches, and even EASIER. I just get a roll of Pillsbury chocolate chip cookie dough - the LARGE roll. I cut the slices thick, to they are large and bake them...when they are cool, I just do as you do, put some soft ice cream in them, press gently and freeze again...and then eat. I got the idea from seeing a girl eat a Nestle ice cream cookie sand. at the ballpark in Texas recently. Ha! I just made those cookie ice cream sandwhiches, and even EASIER.
