Biscuit do-over. When I made the Sour Cream Raisin Biscuits, by reader request for a recipe for cinnamon raisin biscuits, I felt really guilty about forgetting the cinnamon. I had to make more biscuits, this time with raisins and cinnamon. I have a way of getting obsessed about things like biscuits.
And about things like why this dog looks like this.

Sure, Giant Puppy, hide under the car. Does she know her butt is sticking out? She’s so ridiculous.
Kinda like these biscuits. They’re over-the-top, crazy, out of control, rolled up with cinnamon and more cinnamon streusel on top. Oh yeah, and don’t forget the raisins!
You can make these biscuits using my homemade baking mix, Quick Mix or your own favorite baking mix–or if you don’t like to keep baking mix onhand, you can make it by the batch, so I’ve included the recipe from scratch here. I didn’t use sour cream in this recipe because it tends to make the dough very moist and more difficult to work with, and I was planning to work with this biscuit dough. Besides, Over-the-Top Sour Cream Cinnamon Streusel Biscuits would be just too long.
How to make Over-the-Top Cinnamon Streusel Biscuits:
2 cups all-purpose flour
2 teaspoons baking powder
1/3 cup sugar
1/4 teaspoon cream of tartar
1/4 teaspoon salt
1/2 cup butter, softened
3/4 cup raisins*
3/4 cup milk
*Raisins are optional. But since I left the cinnamon out of the last biscuit recipe, I can’t leave the raisins out of this one!
Note: To use a baking mix, replace first 5 ingredients with 2 cups baking mix, adding a tablespoon of sugar.
Place first 5 ingredients (or 2 cups of baking mix) in a large bowl and work in the butter with a pastry cutter. Add the raisins then the milk. Knead the dough lightly, adding a little extra flour if needed to keep from sticking.
I do a lot of my messing around with dough on the dining room table so I can spread out.

I use a plastic cup instead of my rolling pin a lot because I’m too lazy to get out my rolling pin. Like, I’d have to open an extra drawer and everything.
Roll dough out onto a floured surface into an approximately 16 x 8 rectangle. (Like I measure.)
Filling:
1 tablespoon butter, melted
1/4 cup chopped nuts
1 tablespoon cinnamon
2 tablespoons sugar
Spread melted butter over the dough.

Sometimes I’m too lazy to get out my pastry brush, too, and I spread the melted butter with a spoon.
Sprinkle the filling over the top, making sure to get all the way to the edges.

Roll dough up from the long side.

Seal edges.

Slice into 12 pieces.

Place biscuits closely together on a greased baking sheet.

Streusel Topping:
2 tablespoons brown sugar
1 tablespoon all-purpose flour
1 teaspoon cinnamon
1 tablespoon butter
1/2 cup chopped nuts
Combine first four ingredients, blending butter in well with a pastry cutter. Sprinkle streusel topping over the biscuits.

Bake at 450 degrees for 15-20 minutes.

Yeah. These biscuits are ridiculous, but that’s what lazy weekend mornings are for, right? These biscuits are perfect by themselves, you don’t even need butter. Just pick ‘em up and start eating. That’s what I’m gonna do………..
*Recipe makes one dozen biscuits.
P.S. Try cut-up apple instead of raisins!

I went to a game bird swap this morning. In addition to the pheasants, quail, turkey, doves, pigeons, chickens and other feathered birds, they had lambs, baby goats, pigs, rabbits, etc. The Nigerian/Pygmy cross goat babies were adorable. They were 1 week old and ready to be bottle fed. I thought of Annabelle, especially as the person who was selling them (for $75 a piece) said she raises them for house pets. Man, if I had been set up at my other house, I might have gotten one, but the $25 bottle lambs offered on Craigslist is much more tempting . . . .

Oh can’t make up my mind which scones to make so now I have to make two lots next week. Then I’ll have to go without some meals and swim more to lose the calories.
