Daily Dribble
Is that gorgeous or what? A babbling brook in autumn….
I took a drive this weekend to look at fall colors. Do you do that? How’s fall looking where you are? The leaves are turning here, but not in full color yet. West Virginia is one of the prettiest places in the world in autumn.
I’m thinking of entering this photo, and a few others, in the Black Walnut Festival photo contest next year. Then I can pretend I’m doing something useful with all this picture-taking.
My cousin’s son looks excited about selling cornmeal, doesn’t he?
The festival was fun–I had the required funnel cake, watched the parade (why do I like it when the girls drop their batons? and then I feel bad because I enjoyed watching them drop their batons….. I think it must be leftover envy because I never did the baton thing in high school…. And they were always so cute and popular…but I’m OVER IT, really, LOL), and went to the livestock barn where I saw the biggest pigs ever. EVER. The sheep were so sweet. And the brown cows were so pretty. I want some sheep and brown cows…..
I’m sure they’re no trouble to take care of.
Cornbread!
Okay, I said I’d post a cornbread recipe. Everyone has the basic cornbread deal, so I’m going to post something different. Ever made yeast cornbread? It’s so good! Kinda like a french bread, only with the texture of cornmeal.
In a large bowl, combine 1/2 cup cornmeal, 1 teaspoon salt, 1 cup boiling water, 1 tablespoon oil. Stir, let cool to lukewarm. Add another 1/2 cup cornmeal, 1 package yeast, 1/2 cup flour. Stir to combine. Cover with greased plastic wrap and let rise until doubled. Then add approximately 1 cup flour (or as much as needed to make a good, firm dough). Knead. Shape and place on a greased pan. Let rise, then bake about 30 minutes in a 375 degree oven. YUM!
